Sunday everyone! Today I will be showing you how to cook my favourite chocolate
chip cookies. I found this recipe about 6 years ago, and have not used another
chocolate chip cookie recipe since finding this one. It is an extremely easy
recipe, and you can change it to all suit your tastes/dietary requirements.

Butter
½
Cup Caster Sugar
½
Cup Brown Sugar
1
Tsp Vanilla Extract
1
Egg
1
¾ Cup Plain Flour
½
Cup Milk Chocolate Bits
½
Cup White Chocolate Bits
Method:

Preheat your over to 160° and line two baking trays with baking paper. Beat
your softened butter with both sugars and vanilla extract until smooth, and
then beat in the egg until just combined.

Change the mixer accessory from your wire whisk to a flat beater, and start
mixing in the flour in small batches. Once all the flour is added and well
combined, add in the chocolate bits and mix until they are even throughout the
mixture.

Either spoon or roll your mixture into balls and place on your ready trays then
press down slightly. Place into oven and bake for 15-18 minutes or until
lightly golden. (They might look undercooked/too soft, but they will harden
when they are cooling.) Allow them to cool on tray for a few minutes, as they
will be too soft to handle, and then transfer to a wire rack to cool
completely. Store in an airtight container for up to a week.
These are easily made gluten free by replacing the plain flour with gluten free
plain flour and making sure the chocolate bits are gluten free. (All Nestle
chocolate bits are gluten free). The mixture is a lot stickier than the normal
recipe, so you will need to use spoons to transfer onto your trays. They also
spread out a lot when cooking; so make sure they are spaced out enough on the
tray so they don’t run into each other. They cook just as well and taste just
as good!
