Sneaky Snack Sunday - Zucchini Slice

Happy Sunday Everyone. Today I bring you a very versatile recipe, that you can use for lunch, dinner or as a snack. Normally on a weekend I will make a batch or two of zucchini slice, and cute it up to eat for lunch during the week with a side salad or as an afternoon tea snack. They are so easy to make, and I will normally just keep them in the freezer until I feel like one. So lets get into it. (Recipe courtesy of taste.com)



Ingredients

5 Eggs
1 Cup Self-Raising Flour
375g Zucchini
1 Large Onion
200g Bacon Pieces
1 Cup Grated Cheese
1/4 Cup Vegetable Oil





Method




1. Preheat oven to 170c if you have a conventional oven or 160c for fan forced. Then grease and line a pan, about 30x20 cm.


2. Beat the eggs together in a large bowl until combined. Add the flour and beat until smooth.

3. After you have grated your zucchini add it to the bowl, as well as your chopped onion, bacon pieces, grated cheese and oil, the stir to combine.

4. Pour into ready tin and bake in the oven for 30 minutes or until cooked thorough.

This recipe is easily make into gluten free, all you need to do is replace the normal self-raising flour with gluten free self-raising flour. It might take a little longer to cook, but comes out and tastes just the same. Simple.
