Banana muffins have been one of my favourites snacks since I was a child. I remember my Dad would be standing in the kitchen reading from the little blue muffin book we had, making the best banana muffins ever, and I would be standing on the other side of the bench, lending a hand, aka licking the bowl (someone had to). I still to this day can remember the book so clearly, it was very worn with old batter stains on some of the pages, it also had these adorable illustrations of muffin cartoons throughout. I hadn't seen that book for years, but remarkably found it online the other day and decided to order it. When it arrived all these wonderful memories came flooding back, and I was glad that I had a piece of my childhood back in my hands. I have never found a better banana muffin recipe than the one that was in this book and now I don't have to again. Now as I am the one in the kitchen making the muffins, I thought I would share with you today, one of my favourite memories from my childhood.
Ingredients
Wet Mixture
1/2 Cup Butter
1/4 Cup Sugar
1 Egg
1 1/2 Cups Mashed Banana's
(Approx. 3 medium banana's).
Dry Mixture
1 3/4 Cup Self Raising Flour
1/2 Tsp Nutmeg
1 Tsp Baking Soda
Method
Preheat the oven to 200°C conventional or 180°C fan forced and grease or line your muffin pan with patty cases. Blend together the butter and sugar until well combined and then mix in the egg and mashed banana. Combine together the self-raising flour, nutmeg and baking soda, and then mix this into the wet mixture. Place in your ready muffin pan and bake for 20 to 25 minutes, or until a skewer inserted comes out clean.
This recipe is great as it can be changed easily to suit your needs. To make gluten free, all you need to do is change the self raising flour to Gluten Free self raising flour. To make cholesterol free, only use egg whites (no yolks) and use vegetable oil in stead of butter. If you also want to change the recipe to add a bit more flavour you can add 1/2 cup of chocolate chips (any kind), I used white chocolate chips for half of my muffins. I also added 1/4 cup of chopped walnuts to half of my dads gluten free muffins, (use 1/2 a cup for full recipe), but you can add whatever nuts you would like.
