For
this weeks 'Sneaky Snack Sunday' I decided to cook some Banana Bread. This
recipe is one of my absolute favourites, and is a favourite around my
household. It is super yummy and very easy to make, so let’s get right into it! (Recipe courtesy of Taste.com)
1 ¾ cups Self Raising
Flour
¼ Cup Plain Flour
1 Tsp Ground Cinnamon
⅔ Cup Brown Sugar
½ Cup Skim Milk
2 Eggs
50g Butter
2 Overripe Bananas

1. Firstly preheat
your over to 180°C and Grease and line a loaf pan
(11cm x 21cm). Sift both flours and cinnamon into a large bowl, then stir
through brown sugar until just combined, and make a well in the center.
2. In a
small bowl, lightly whisk eggs, add milk, melted butter and mashed bananas, and
stir until combined. Add
the wet mix into the dry mix, and stir through until well combined.
3. Spoon
mixture into your ready pan, you can garnished the top with some extra banana and cinnamon. Place in your preheated oven for 40 to 45
minutes or until skewer inserted comes out clean. (Mine took 45 minutes, and my
GF version took 55). When taken out of the oven, leave in pan for 5 minutes, then
transfer onto a wire rack to cool completely.
Cut and Enjoy!
I love to
have a slice of banana bread in the morning with a cup of coffee or hot chocolate,
or for a nice afternoon snack. I love how you can alter the recipe to suit your
taste/or needs, by either adding extra ingredients like sultanas, chocolate
chips or walnuts, or change to make Gluten or Lactose Free.
