Happy Sunday everyone! And apologies for my absence recently for the Sneaky Snack Sunday posts! I have become a bit more busy then usual, so I've just been trying to figure everything out so that I am able to bring you guys some yummy posts. I have cooked a few times this week so I should be set for about another four posts, so yay! Today I am bringing you a delicious Blueberry Muffin recipe that I found by Jenn Segal on Once Upon A Chef. It has been one of the best Blueberry Muffin recipe's I have found and eaten in ages, so I hope you all enjoy.
2 Cups Plain Flour
2 Tsp Baking Powder
¾ Tsp Salt
114g Butter
1 Cup White Sugar
2 Eggs
1 ½ Tsp Vanilla Extract
½ Cup Milk
2 ¼ Cup Blueberries
2 Tbsp Raw Sugar
Method

1. Preheat you oven to 190C or 180C Fan Forced. Grease your muffin tray
with either olive oil spray or butter and line them with patty pans. Beat the butter and white sugar together in your electric mixer until light and creamy. Beat in the eggs one at a time then add vanilla extract and beat until combined.
2. In a medium bowl mix together the flour, baking powder and salt
until combined. Gradually add the flour mix to your wet mix, alternating with
the milk, until the mixture looks light of colour and creamy. Fold in your
blueberries (I used frozen blueberries) until evenly distributed.
3. Scoop your mixture into ready muffin tray (they will be quite full),
and sprinkle the raw sugar evenly over all the muffins. Place in your oven and
bake for 30 minutes or until skewer inserted comes out clean.
Just a few side notes, it is suggested that you use fresh blueberries, but as I didn't have any I used frozen. I thawed them out before I started cooking, and put them through a strainer to get rid of excess juice. They did turn the mixture a tinge more purple then fresh blueberries would, but they worked and tasted fine. I also wrapped and froze all the muffins individually, it makes it really easy to just grab one and pop it into your bag for a morning or afternoon snack as they will be thawed by the time you eat it, and it definitely fills the spot to keep you going through the day.
