Happy Sunday Everyone! The biggest problem with your brother selling chocolates for fundraising is finding ideas to use them in baking, and then spending all your money on them. Whoops. But Giant Toblerone Cookies are always a good idea and were definitely delicious! So today I'm sharing with you this guilty pleasure recipe, trust me, you'll love it!
55g Butter
120g Brown Sugar
1 Egg
2 Tsp Vanilla Extract
140g Plain Flour
½ Tsp Bi-Carb Soda
½ Tsp Salt
200g Toblerone
Method
1. Preheat your oven to 180°C or 160°C Fan
Forced and line two baking trays with non-stick baking paper. Cream together
the butter and sugar until light and fluffy. Beat in the egg and vanilla
extract until the mixture is smooth.
2. Sift the flour, bi-carb soda and salt
into the wet mixture and fold it through until well combined. Add in the
roughly chopped toblerone (I basically just cut the little triangles in half)
and mix until evenly distributed.
3. Drop 3 generously heaped balls of cookie
dough onto prepared trays, leaving a large amount of space between each one for
spreading. Put the remaining toblerone over the top of the cookies. Place in
the oven and bake for 15 minutes, then pull out and allow to set on tray, then
transfer to cooling rack to cool completely.
Enjoy with a nice cuppa.
