Sneaky Snack Sunday - Amazing Chocolate Brownies

So yesterday I was just in the 'mood to bake' and nothing could stop me. I riffled through book after book until I decided that the 'Amazing Chocolate Brownies' from Tanya Burr's 'Love Tanya' were the ones. I was pleasantly surprised by the healthy ingredients and how gooey and delicious they turned out. Definitely going to have to get my mitts on Tanya's new cookbook!

INGREDIENTS

½ Cup Coconut Oil
300g Dark Chocolate
2 Cups Coconut Sugar
1 Cup Ground Almonds (I used almond meal)
1 Tsp Baking Powder
1 Avocado
1 Capful Vanilla Extract
Pinch of Salt
3 Eggs

METHOD

Firstly, preheat your oven to 180°C and prepare your slice tin by lining it with baking paper. Pop a large saucepan over low heat and add in your coconut oil and dark chocolate. Stir with a wooden spoon every now and then to mix together. Whilst that in melting, mash your avocado and beat your eggs with a fork. When the chocolate is completely melted start adding in all your ingredients, stirring after each one to make sure they are all properly combined. 

Pour the mixture into your ready tin and place in the over for 26 minutes. Take out of the oven, it should look cooked on top, and leave to cool for 20 minutes. Serve with whatever you like. This makes a great dessert, I had mine with some low fat ice-cream and strawberries, so yum!


I was really unsure about how this recipe would turn out, but it is definitely going on my list to make more often. If you didn't tell someone this was a healthier take on a brownie, then they would never know, and honestly would probably like this better. I would highly recommend everyone try out this recipe!!
