Sneaky Snack Sunday - M&M & Chocolate Chip Cookie Bars

Okay no lie, these are probably my favourite thing I have baked in a while! They are delicious, more-ish and just everything-ish! Definitely thrilled I found this recipe on Averie Cooks! Okay, Okay! Enough of the rambling and onto the recipe.


INGREDIENTS

125g Unsalted Butter, softened
1 Large Egg, whisked
1 Cup Brown Sugar
1 Tbsp Vanilla Essence
1 Cup Plain Flour
½ Tsp Salt
1 Cup Peanut M&M's (Or whichever you prefer)¾ Cup Chocolate Chips

METHOD

Firstly, preheat your oven to 170'c and line a slice tin with baking paper. The slice tin should give you 9 to 12 generous squares of goodness. In your bowl, add the butter, brown sugar, vanilla extract and egg, and whisk together until smooth. When that is done, stir in the flour and salt, but be sure not to over-mix! Stir in your cup each of M&M's and chocolate chips (Mmm the best part!). Pop the mixture into your ready tin and smooth down with a spatula, you can do this with your hands, but be warned, it's sticky! (Trust me). Add some extra chocolate chips and M&M's on top for that 'visual effect' and lightly press down with your finger.

Bake for 25 to 28 minutes or until a skewer inserted shows that it is done. Remember the bars will firm as they cool, and try and cool them for at least one hour. You can keep the bars in an airtight container for up to a week or in the freezer for up to 6 months. (YAASSSS!)

These bars are seriously YUM and I recommend you try them out RIGHT NOW! Seriously!!
